Half the jar is air. On purpose.
A full batch is about a cup. It lands just past halfway up the jar (255 ml, if you're counting). The rest is headspace: cap on, shake hard, and the empty half is where the emulsion happens.

Heat
- Cold-side only: the jar measures, shakes, and stores. It never goes on heat.
- Never pour hot liquids or hot oil into the jar.
- Cool cooked sauces briefly before storing, then refrigerate promptly.
- Never shake a sealed warm jar.
