Ingredients

  • Butter6 tbsp salted (84g)
  • Onion1 large (1 cup) yellow, finely chopped
  • Garlic6 cloves (2 tbsp), finely chopped
  • Yellow Mustard2 tsp (10g)
  • Cayenne1 1/2 tbsp (12g)
  • Salt1/2 tsp seasoning salt (3 g)
  • Dry Mustard2 tsp mustard powder (2g)
  • Brown Sugar1/2 cup packed dark (100g)
  • Ketchup2 cups (470g)
  • Cider Vinegar2/3 cup cider vinegar (150g)
  • Worcester1/3 cup (75g)
  • Red Pepper4 tsp red pepper flakes (8g)
  • Liquid Smoke2 tbsp (30g)

Method

  1. This sauce is cooked on the stove — the jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
