Smoked Bonito Vinaigrette

Smoked bonito steeped into a savory vinaigrette for raw fish.

Ingredients

  • Bonito Vinegar100 ml
  • Olive Oil300 ml
  • Sate Spice2 g
  • Lemon Zest2 g
  • Lime Zest2 g
  • Saltfleur de sel, to taste
  • Pepperto taste

Method

  1. Pour to the lines in order (bottom → top): Bonito Vinegar, Olive Oil.
  2. Add finishing notes: Sate Spice, Lemon Zest, Lime Zest, Salt, Pepper.
  3. Cap the jar and shake until emulsified.

Provenance

Pakistani-born French chef; earned two Michelin stars at Sylvestre in Paris after starring at L'Oustau de Baumanière in Provence.
