Chervil Vinaigrette

Soft chervil and white wine vinegar for tomatoes and roast hake.

Ratio by volume: Rapeseed Oil 136 ml, White Wine Vinegar 60 ml

Ingredients

  • Rapeseed Oil136 ml
  • White Wine Vinegar60 ml
  • Chervil3 g
  • SaltCornish sea salt, to taste
  • Pepperto taste

Method

  1. Pour to the lines in order (bottom → top): Rapeseed Oil, White Wine Vinegar.
  2. Add finishing notes: Chervil, Salt, Pepper.
  3. Cap the jar and shake until emulsified.

Provenance

Cornish seafood specialist; ran the two-Michelin-star Restaurant Nathan Outlaw and now leads Outlaw's New Road in Port Isaac.
