Ingredients
- Cider Vinegar4½ cups (1100 ml)
- Honey2¾ cups (634 ml)
- Water8¼ cups (2000 ml)
- Bay Leaf5
- Pepperabout 3 Tbsp (25 g)
- Nutmeg10 g
- Grains of Seli10 g
- Dried Chileabout 5 chiles (10 g)
- Lavender10 g
Method
- Pour to the lines in order (bottom → top): WATER, HONEY.
- Season to finish: CIDER VINEGAR (to taste), BAY LEAF (½ leaf), PEPPER (about 1 tsp), NUTMEG (about ½ tsp), GRAINS OF SELI (about ½ tsp), DRIED CHILE (½ chile).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
