Ratio by volume: Water 120 ml, Dry Mustard 3 ml, Worcester 60 ml, Garlic Powder 60 ml, Onion Powder 45 ml, Salt 15 ml, Brown Sugar 120 ml, Cayenne 5 ml, Smoked Paprika 5 ml, Cider Vinegar 120 ml, Molasses 120 ml, Ketchup 480 ml

Ingredients

  • Water½ cup water (120 ml)
  • Garlic4 garlic cloves, smashed
  • Onion1 yellow onion, roughly diced
  • Dry Mustard½ tsp ground mustard powder (2.5 ml)
  • Worcester¼ cup Worcestershire (60 ml)
  • Garlic Powder¼ cup granulated garlic (60 ml)
  • Onion Powder3 Tbsp granulated onion (45 ml)
  • Salt1 Tbsp kosher salt (15 ml)
  • Brown Sugar½ cup dark brown sugar, packed (120 ml)
  • Cayenne1 tsp cayenne (5 ml)
  • Smoked Paprika1 tsp smoked paprika (5 ml)
  • Cider Vinegar½ cup cider vinegar (120 ml)
  • Molasses½ cup molasses (120 ml)
  • Ketchup2 cups ketchup (480 ml)

Method

  1. Pour to the lines in order (bottom → top): Water, Dry Mustard, Worcester, Garlic Powder, Onion Powder, Salt, Brown Sugar, Cayenne, Smoked Paprika, Cider Vinegar, Molasses, Ketchup.
  2. Add: Garlic, Onion, Salt.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
