Ingredients

  • Cherry Tomato10–12 cherry tomatoes, quartered
  • Strawberry10–12 strawberries/raspberries, quartered (120 g)
  • Peach½ firm peach, diced (75 g)
  • Shallot1 French shallot, thinly sliced
  • White Wine Vinegar1 Tbsp Chardonnay vinegar (15 ml)
  • Olive Oil½ cup olive oil (120 ml)
  • Fish Sauce1 tsp fish sauce (5 ml)
  • Sriracha2 tsp sriracha (10 ml)
  • Lemon Zestzest of ½ lemon (1 g)
  • Lemon Juicejuice of ½ lemon (15 ml)
  • Pepperblack pepper (0.5 g)
  • Chives½ Tbsp chives (1.5 g)
  • Basil1 Tbsp basil (3 g)
  • Parsley1 Tbsp parsley (3 g)

Method

  1. Pour to the lines in order (bottom → top): White Wine Vinegar, Olive Oil, Fish Sauce, Sriracha, Lemon Juice.
  2. Add finishing notes: Cherry Tomato, Strawberry, Peach, Shallot, Lemon Zest, Pepper.
  3. Cap the jar and shake until emulsified.
