Ingredients

  • Yogurt125 g de yogur natural
  • Olive Oil6 cucharadas de aceite de oliva virgen extra (90 ml)
  • Saltsal (2 g)
  • Pepperpimienta negra recién molida (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Yogurt, Olive Oil.
  2. Add finishing notes: Salt, Pepper.
  3. Cap the jar and shake until emulsified.

Provenance

Basque chef with more Michelin stars than any other Spanish chef; his flagship in Lasarte-Oria has held three stars since 2001.
