Ingredients

  • Soy Sauce3 Tbsp (43 ml)
  • Dark Soyabout 1½ tsp (8 ml)
  • Shaoxing2 tsp (10 ml)
  • Oyster Sauceabout 1½ tsp (8 ml)
  • Sugarabout 1 tsp (5 g)
  • Msg3 g
  • Saltabout ⅛ tsp (1 g)
  • Chicken Stock2½ cups (594 ml)
  • Soybean Oilabout ¼ cup (54 ml)

Method

  1. Pour to the lines in order (bottom → top): CHICKEN STOCK, SOYBEAN OIL, SOY SAUCE.
  2. Season to finish: SUGAR (about ½ tsp), MSG (about ¼ tsp), SALT (a pinch), DARK SOY (about ½ tsp), SHAOXING (about ¾ tsp), OYSTER SAUCE (about ½ tsp).
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
