- Red Miso — 1/3 cup (80 ml) red miso
- White Miso — 1 tbsp (15 ml) Saikyo / sweet white miso
- Sake — 2 tbsp (30 ml) sake
- Mirin — 2 tbsp (30 ml) mirin
- Brown Sugar — 2 tbsp (25 g) raw brown sugar
- Soy Sauce — 2 tbsp (30 ml) soy sauce
- Rice Vinegar — 1/4 cup (60 ml) rice vinegar
- Garlic — 1 clove garlic, grated
- Ginger — 1 tsp grated peeled ginger (5 ml)
- Tobanjan — 2 tsp tobanjan (optional) (10 ml)
Method
- Pour to the lines in order (bottom → top): Red Miso, White Miso, Sake, Mirin, Brown Sugar, Soy Sauce, Rice Vinegar, Ginger, Tobanjan.
- Add finishing notes: Garlic, Tobanjan.
- Cap the jar and shake until emulsified.
