Ingredients

  • Sake1/3 cup sake (80 ml)
  • Mirin1/3 cup mirin (80 ml)
  • Sugar1 tbsp + 2 tsp sugar (25 ml)
  • Dashi1¾ cups dashi (420 ml)
  • White Soy1/3 cup white soy / white tamari (80 ml)

Method

  1. Pour to the lines in order (bottom → top): DASHI, SAKE, MIRIN, WHITE SOY.
  2. Season to finish: SUGAR (about 2 tsp).
  3. Cap the jar and shake until emulsified.
