- Thai Chile — 25g roter Thai-Chili, klein geschnitten (1/10 = 2.5g)
- Dried Mushroom — 500g getrocknete Pilze (Steinpilze, Champignons, Pfifferlinge) (1/10 = 50g)
- Lovage — 800g frischer Liebstöckel (1/10 = 80g)
- Dashi — 1,8 l Dashi (1/10 = 180ml)
- Soy Sauce — 1,8 l Sekigahara Tamari Sojasauce (1/10 = 180ml)
Method
- This sauce is cooked on the stove — the jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
