Great on Simmer base ~2 h → strain; finish 50 g base + soy + garlic. The same recipe pairs it with Chinese Chili Oil, its companion sauce.

Ingredients
- Soy Sauce1¾ cups (435 ml)
- Rock Sugar500 g
- Water1 cup + 14 Tbsp water (450 ml)
- Five Spice5 g
- Soy Sauce Fini5 g
- Garlicabout 1 clove (5 g)
Method
- Pour to the lines in order (bottom → top): WATER, SOY SAUCE.
- Shake-to-line (dashed marks): add ROCK SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Season to finish: FIVE SPICE (about ½ tsp), SOY SAUCE FINI (about ¼ tsp), GARLIC (¼ clove).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
