Ingredients

  • Saffron5 saffron stamens
  • Water50 ml water (reduce to 1 tbsp saffron water)
  • Egg Yolk2 egg yolks
  • Dijon Mustard1 tbsp Dijon (15 ml)
  • Lime Juicedash lime juice (5 ml)
  • Rapeseed Oil150 ml sunflower/rapeseed oil (stream)
  • Garlic1 minced garlic
  • Water2 tbsp hot water (30 ml)
  • Coriandersmall handful chopped coriander (10 g)
  • Limelime zest + remaining juice
  • Saltsalt (2 g)
  • Pepperpepper (0.5 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
