Marrowlane Salty-Sour Caramelized Fish

Ratio by volume: Fish Sauce 45 ml, Rice Vinegar 240 ml, Scallion 60 ml

Ingredients

  • Fish Sauce3 Tbsp fish sauce (caramelize 1 Tbsp at a time in hot pan) (45 ml)
  • Rice Vinegar1 cup unseasoned rice vinegar (240 ml)
  • Scallion¼ cup sliced scallions (60 ml)
  • Ginger1 (½") piece ginger, peeled, finely grated (8 g)
  • Saltkosher salt (2 g)

Method

  1. Pour to the lines in order (bottom → top): Fish Sauce, Rice Vinegar, Scallion.
  2. Add finishing notes: Ginger, Salt.
  3. Cap the jar and shake until emulsified.
