  • Ketchup4 Tbsp ketchup (60 ml)
  • Dill Pickle50 g pickles
  • Pickle Brine30 ml pickle brine
  • Red Pepper¼ red pepper (30 g)
  • Yellow Pepper¼ yellow pepper (30 g)
  • Green Pepper¼ green pepper (30 g)
  • Shallot35 g shallot
  • Cognac30 ml brandy
  • White Wine Vinegar20 ml vinegar
  • Sugar1 tsp sugar (4 g)
  • SaltS+P (2 g)
  • Pepperpepper (0.3 g)

Method

  1. Pour to the lines in order (bottom → top): Mayo, Ketchup, Pickle Brine, Cognac, White Wine Vinegar.
  2. Add finishing notes: Dill Pickle, Red Pepper, Yellow Pepper, Green Pepper, Shallot, Sugar.
  3. Cap the jar and shake until emulsified.
