Ingredients
- Leek — 1 Bund Frühlingszwiebeln, gehackt
- Shallot — 2 Schalotten, gehackt
- White Wine — 1 dl Weisswein (100 ml)
- Veg Stock — 1 dl Gemüsebrühe (100 ml)
- Cream — 1 dl Vollrahm (100 ml)
- Pro Espuma — 80 g Pro Espuma (warm)
Method
- Pour to the lines in order (bottom → top): White Wine, Veg Stock, Cream.
- Add: Leek, Shallot, Pro Espuma.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
