Ingredients

  • Leek1 Bund Frühlingszwiebeln, gehackt
  • Shallot2 Schalotten, gehackt
  • White Wine1 dl Weisswein (100 ml)
  • Veg Stock1 dl Gemüsebrühe (100 ml)
  • Cream1 dl Vollrahm (100 ml)
  • Pro Espuma80 g Pro Espuma (warm)

Method

  1. Pour to the lines in order (bottom → top): White Wine, Veg Stock, Cream.
  2. Add: Leek, Shallot, Pro Espuma.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
