Ingredients

  • Pecorino1/4 cup grated Pecorino or Parmigiano (60 ml)
  • Olive Oil2 Tbsp EVOO (30 ml)
  • Lemon Zestzest of 1 lemon
  • Lemon Juicejuice of 1 lemon
  • Garlic1 clove garlic, minced
  • Honey1/2 tsp honey (2.5 ml)
  • Salt1/2 tsp kosher salt (2.5 ml)
  • Red Pepper1/4 tsp crushed red chile flakes (1.25 ml)
  • Pepperfreshly ground black pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Pecorino, Olive Oil, Lemon Juice, Honey, Salt, Red Pepper.
  2. Add finishing notes: Lemon Zest, Garlic, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
