Maplerail Zucchini with Dill

Ingredients

  • Zucchini1 medium zucchini (~8 oz / 230 g), 1-inch chunks (~1¾ cups)
  • Scallion1 (3-inch) scallion piece
  • Dill1 cup (1 oz / 30 g) chopped dill incl. tender stems
  • Mint½ cup (scant ¼ oz / 6 g) mint leaves
  • Lime Juice3 Tbsp (45 mL) lime juice
  • Olive Oil3 Tbsp (45 mL) EVOO or cold-pressed flax
  • Salt½ tsp fine sea salt (2.5 ml)

Method

  1. Pour to the lines in order (bottom → top): Zucchini, Dill, Mint, Lime Juice, Olive Oil, Salt.
  2. Add finishing notes: Scallion, Salt.
  3. Cap the jar and shake until emulsified.
