Ingredients

  • Sesame Paste30 g
  • Soy Milk200 ml
  • Soy Sauce30 ml
  • Sugar15 ml
  • Garlic3 g
  • Chili Oil1 ml

Method

  1. Pour to the lines in order (bottom → top): Soy Milk, Soy Sauce, Sugar, Chili Oil.
  2. Add finishing notes: Sesame Paste, Garlic.
  3. Cap the jar and shake until emulsified.

Hiromitsu Nozaki works in Japanese kaiseki / washoku at Waketokuyama; credentials include Michelin 2* (Waketokuyama, Tokyo).
