Ingredients
- Coconut Creamabout ⅔ cup (150 ml)
- Curry Paste80 g
- Palm Sugar20 g
- Fish Sauceabout 1½ Tbsp (20 ml)
- Saltpinch salt (1 g)
- Coconut Milk1½ cups (350 ml)
Method
- Pour to the lines in order (bottom → top): COCONUT MILK, COCONUT CREAM.
- Shake-to-line (dashed marks): add CURRY PASTE. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Season to finish: PALM SUGAR (about 2 tsp), SALT (a pinch), FISH SAUCE (about 2 tsp).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
