Ratio by volume: Champagne 30 ml, Capers 15 ml, Lemon Juice 15 ml, Olive Oil 120 ml

Ingredients

  • Shallot1 shallot, minced
  • Champagne2 Tbsp Champagne or white wine vinegar (30 ml)
  • Dandelion1 bunch dandelion greens (3/4 pound), trimmed, cooked, chopped (340 g)
  • Capers2 caperberries or 1 Tbsp drained capers, minced (15 ml)
  • Lemon Juice1 Tbsp fresh lemon juice (15 ml)
  • Olive Oil1/2 cup fruity extra-virgin olive oil (120 ml)
  • SaltSea salt (2 g)
  • PepperFreshly ground black pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Champagne, Capers, Lemon Juice, Olive Oil.
  2. Add finishing notes: Shallot, Dandelion, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
