Ingredients

  • Lemongrass15 gr. de citronela (15 g)
  • Ginger10 gr. de jengibre (10 g)
  • Cilantro5 gr. de cilantro (5 g)
  • Makrut Leaf2 hojas de lima kaffir
  • Fish Stock70 gr. de caldo de bonito (69.31 ml)
  • Fish Sauce5 gr. de salsa de pescado (4.24 ml)
  • Sesame Oil7 gr. de aceite de sesamo (7.61 ml)
  • Lime Juice20 gr. de zumo de lima (19.42 ml)
  • Coconut Milk150 gr. de leche de coco (154.64 ml)
  • Water20 gr. de agua (20 ml)
  • Salt10 gr. de sal (10 g)
  • Aji Amarillo15 gr. de pasta de aji amarillo (15 g)
  • Worcester5 gr. de salsa Worcestershire (4.35 ml)
  • Rice Vinegar10 gr. de vinagre de arroz (9.9 ml)
  • Kuzupizca de kuzu (1 g)

Method

  1. Pour to the lines in order (bottom → top): Fish Stock, Fish Sauce, Sesame Oil, Lime Juice, Coconut Milk, Water, Worcester, Rice Vinegar.
  2. Add: Lemongrass, Ginger, Cilantro, Makrut Leaf, Salt, Aji Amarillo.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
