Ingredients

  • Sticky Rice2 Tbsp raw sticky rice or jasmine rice (30 ml)
  • Dried Chile2 tsp crushed dried Thai chiles (10 ml)
  • Fish Sauce1/2 cup Asian fish sauce (120 ml)
  • Sugar1/4 cup sugar (60 ml)
  • Shallot2 Tbsp chopped shallot (30 ml)
  • Thai Chileabout 1½ chiles (3 g)

Method

  1. Pour to the lines in order (bottom → top): FISH SAUCE.
  2. Shake-to-line (dashed marks): add SUGAR, then STICKY RICE. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: ¾ SHALLOT.
  4. Season to finish: DRIED CHILE (3 chiles), THAI CHILE (1½ chiles).
  5. Cap the jar and shake until emulsified.
