Ingredients

  • Shallot3 medium shallots, finely chopped (pickle in ¾ cup sherry vinegar ≥8 h)
  • Sherry Vinegar¾ cup sherry vinegar (pickle) + 1 Tbsp in dressing (195 ml)
  • Basil Pesto3 Tbsp purchased basil pesto (45 ml)
  • Lemon Juice1 Tbsp lemon juice (15 ml)
  • Salt1 tsp kosher salt (5 ml)
  • Pepper½ tsp black pepper (2.5 ml)
  • Grapeseed Oil1 cup grapeseed oil (240 ml)
  • Olive Oil1½ tsp olive oil (7.5 ml)

Method

  1. Pour to the lines in order (bottom → top): Sherry Vinegar, Basil Pesto, Lemon Juice, Salt, Pepper, Grapeseed Oil, Olive Oil.
  2. Add finishing notes: Shallot, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
