Ratio by volume: Olive Oil 60 ml, White Wine 80 ml, White Wine Vinegar 45 ml, Salt 5 ml

Ingredients

  • Olive Oil¼ cup EVOO total (2 Tbsp pancetta + 2 Tbsp fresh) (60 ml)
  • Bacon6 oz pancetta, diced (cooked in first 2 Tbsp oil) (170 g)
  • White Wine⅓ cup white wine (79.92 ml)
  • White Wine Vinegar3 Tbsp white wine vinegar (45 ml)
  • Salt1 tsp kosher salt (5 ml)

Method

  1. Pour to the lines in order (bottom → top): Olive Oil, White Wine, White Wine Vinegar, Salt.
  2. Add finishing notes: Bacon, Salt.
  3. Cap the jar and shake until emulsified.
