Ingredients

  • Egg White1 clara de huevo duro, picada fina
  • Chives¼ manojo de cebollino en rodajas (5 g)
  • Hazelnuts10 g avellanas peladas, tostadas, picadas
  • Shallot1 chalota en brunoise
  • Chicken Stock250 ml caldo de ave
  • Olive Oil30 ml aceite de oliva
  • Champagne30 ml vinagre de champán
  • White Balsamic10 ml vinagre balsámico blanco
  • Vegetable Oil60 ml aceite vegetal
  • Sunflower Oil60 ml aceite de girasol
  • Safflower Oil60 ml aceite de cártamo
  • Grapeseed Oil80 ml aceite de semilla de uva
  • Saltsal
  • Pepperpimienta
  • Sugarazúcar

Method

  1. Pour to the lines in order (bottom → top): Chicken Stock, Olive Oil, Champagne, White Balsamic, Vegetable Oil, Sunflower Oil, Safflower Oil, Grapeseed Oil.
  2. Add finishing notes: Egg White, Chives, Hazelnuts, Shallot, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
