Ingredients
- Onion — ½ cup chopped sweet onion (120 ml)
- Celery — ¼ cup minced celery (60 ml)
- Carrot — ¼ cup minced carrot (60 ml)
- Garlic — 1 Tbsp minced garlic (15 ml)
- Ginger — 1 tsp crushed minced ginger (5 ml)
- Salt — 1 tsp kosher/sea salt (5 ml)
- Vegetable Oil — 2 Tbsp oil (30 ml)
- Tomato Paste — ¾ cup tomato paste (180 ml)
- Apple Juice — ½ cup apple juice/cider (120 ml)
- Applesauce — ½ cup grated apple or applesauce (120 ml)
- Apple Butter — ½ cup apple butter (120 ml)
- Cider Vinegar — ½ cup apple cider vinegar (120 ml)
- Soy Sauce — ¼ cup low-sodium soy (60 ml)
- Brown Mustard — ¼ cup brown mustard (60 ml)
- Brown Sugar — ½ cup light brown sugar (120 ml)
- Kitchen Pepper — 1 tsp kitchen pepper (5 ml)
- Paprika — 1 tsp sweet paprika (5 ml)
- Pepper — 1 tsp coarse black pepper (5 ml)
- Seasoning Salt — 1 tsp seasoned salt (5 ml)
Method
- Pour to the lines in order (bottom → top): Onion, Celery, Carrot, Garlic, Ginger, Salt, Vegetable Oil, Tomato Paste, Apple Juice, Applesauce, Apple Butter, Cider Vinegar, Soy Sauce, Brown Mustard, Brown Sugar, Kitchen Pepper, Paprika, Pepper, Seasoning Salt.
- Add: Salt, Pepper.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
