  • Egg Yolkabout 3 yolks (54 g)
  • Dijon Mustard2 tbsp tarragon mustard (30 ml)
  • Waterabout 6 Tbsp (100 ml)
  • Grapeseed Oilabout ⅔ cup (150 ml)
  • Egg Whiteabout 2½ whites (90 g)
  • Cornichonabout 3 cornichons (30 g)
  • Caper2 tsp baby capers (10 ml)
  • Tarragon¾ cup tarragon, loosely packed (180 ml)
  • Chervil1 cup chervil, finely chopped, loosely packed (240 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
