- Red Onion — 125 g julienne
- Habanero — 9 g brunoise
- Oregano — 0.6 g Mexican
- Lime Juice — 56 g
- Orange Juice — 19 g
- Cider Vinegar — 12 g
- Salt — 3 g
- Cinnamon — pinch from spice sachet (0.5 g)
- Bay Leaf — pinch (0.3 g)
- Allspice — pinch (0.5 g)
- Coriander — pinch seeds (0.5 g)
- Clove — pinch (0.2 g)
Method
- Pour to the lines in order (bottom → top): Lime Juice, Orange Juice, Cider Vinegar.
- Add finishing notes: Red Onion, Habanero, Oregano, Salt, Cinnamon, Bay Leaf.
- Cap the jar and shake until emulsified.
