Ingredients

  • Shallotabout 1½ shallots (60 g)
  • Butter1½ Tbsp (20 g)
  • White Wine1 cup + 1/4 cup white wine (300 ml)
  • Fish Stock1 cup + 1/4 cup fish stock (300 ml)
  • Heavy Cream1 cup + 1/4 cup heavy cream (300 ml)
  • Saltabout ¼ tsp (2 g)
  • Espeletteabout ½ tsp (1 g)
  • Lime Juice1/8 cup lime juice (30 ml)

Method

  1. This sauce is cooked on the stove. The jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
