- Butter — 150 g Butter → beurre noisette (crystals reserved)
- Water — 350 g Wasser
- Kombu — 20 g getrocknete Kombualgen
- Bonito — 15 g Bonitoflakes
- Kombu Vinegar — 10 g schwarzer Kombuessig
- Star Anise Vinegar — 20 g Sternanisessig
- Birch Smoke Oi — 4 Tropfen Birkenrauchöl (0.2 ml)
- Salt — Salz (2 g)
Method
- This sauce is cooked on the stove — the jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
