Ingredients

  • Butter150 g Butter → beurre noisette (crystals reserved)
  • Water350 g Wasser
  • Kombu20 g getrocknete Kombualgen
  • Bonito15 g Bonitoflakes
  • Kombu Vinegar10 g schwarzer Kombuessig
  • Star Anise Vinegar20 g Sternanisessig
  • Birch Smoke Oi4 Tropfen Birkenrauchöl (0.2 ml)
  • SaltSalz (2 g)

Method

  1. This sauce is cooked on the stove — the jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
