Ingredients
- Muscat — 120 ml Muscat de Rivesaltes reduced to 2 Tbsp
- Lemon Juice — juice of 1 lemon (30 ml)
- Sesame Oil — 4 Tbsp sesame oil (60 ml)
- Veal Stock — 2 Tbsp light veal jus (30 ml)
- Ginger — ½ tsp chopped ginger (2.5 ml)
- Oyster Coral — crushed coral from 6 spéciales oysters
- Green Onion — chopped green onions (from 4)
Method
- Pour to the lines in order (bottom → top): Muscat, Lemon Juice, Sesame Oil, Veal Stock, Ginger.
- Add finishing notes: Oyster Coral, Green Onion.
- Cap the jar and shake until emulsified.
