  • Fish Sauce1/4 cup Thai (60 ml)
  • Tamarind1 oz seedless pulp/paste (28 g)
  • Water1 1/4 cups (300 ml)
  • Chile Powder1 Tbsp toasted chile powder (phrik phon khua) (8 g)

Method

  1. This sauce is cooked on the stove. The jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
