Ratio by volume: Rice Vinegar 50 ml, Water 150 ml

Ingredients

  • Rice Vinegar50 ml vinaigre de riz
  • Water150 ml eau
  • Sugar40 g sucre semoule
  • Shallot1 échalote 50 g
  • Ginger20 g gingembre net
  • Cilantro20 feuilles coriandre
  • Espelette1 cm piment d'Espelette (2 g)

Method

  1. Pour to the lines in order (bottom → top): Rice Vinegar, Water.
  2. Add finishing notes: Sugar, Shallot, Ginger, Cilantro, Espelette.
  3. Cap the jar and shake until emulsified.
