Ingredients

  • Tuna¾ cup oil-packed tuna, drained (180 ml)
  • Bonito½ cup Bonito flakes, loosely packed (120 ml)
  • Anchovy2 anchovy fillets
  • Garlic1 small garlic clove, blanched
  • Egg Yolk2 egg yolks
  • Capers2 tbsp capers, rinsed (30 ml)
  • Lemon Juice1½ tbsp lemon juice (22.5 ml)
  • Dijon Mustard Mustard1 tbsp Dijon mustard (15 ml)
  • Neutral Oil½ cup neutral oil (120 ml)
  • Olive Oil3 tbsp olive oil (45 ml)
  • Saltsalt, to taste

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
