Ingredients

  • Egg Yolk50 g yemas pasteurizadas
  • Lemon Juice7 g zumo de limón
  • Olive Oil150 g aceite de oliva
  • Water15 g agua
  • Bonito30 g bonito embotado en aceite
  • Anchovy30 g anchoas en salazón
  • Grain Mustard8 g mostaza en grano
  • Soy Sauce2 g salsa de soja
  • Saltsal

Method

  1. Pour to the lines in order (bottom → top): Lemon Juice, Olive Oil, Water, Grain Mustard, Soy Sauce.
  2. Add finishing notes: Egg Yolk, Bonito, Anchovy, Salt.
  3. Cap the jar and shake until emulsified.
