- Egg Yolk — 50 g yemas pasteurizadas
- Lemon Juice — 7 g zumo de limón
- Olive Oil — 150 g aceite de oliva
- Water — 15 g agua
- Bonito — 30 g bonito embotado en aceite
- Anchovy — 30 g anchoas en salazón
- Grain Mustard — 8 g mostaza en grano
- Soy Sauce — 2 g salsa de soja
- Salt — sal
Method
- Pour to the lines in order (bottom → top): Lemon Juice, Olive Oil, Water, Grain Mustard, Soy Sauce.
- Add finishing notes: Egg Yolk, Bonito, Anchovy, Salt.
- Cap the jar and shake until emulsified.
