Ingredients

  • Dijon Mustard2 ½ Tbsp Dijon mustard (37.5 ml)
  • Sherry Vinegar2 Tbsp sherry vinegar (30 ml)
  • Garlic2 cloves garlic
  • Paprika¼ tsp paprika (1.25 ml)
  • Egg Yolk2 egg yolks
  • Salt1 tsp salt (5 ml)
  • Pepper½ tsp ground black pepper (2.5 ml)
  • Vegetable Oil1 cup vegetable oil (240 ml)
  • Olive Oil½ cup olive oil (120 ml)
  • Tarragon¼ cup fresh tarragon leaves (60 ml)
  • Mint10 fresh mint leaves
  • Parsley10 flat-leaf parsley leaves

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
