A garlic emulsion for seafood and sandwiches.

Ingredients
- Tabasco — ¾ tsp Tabasco Chipotle + ¼ tsp Tabasco Original (5 ml)
- Mayo — ½ cup mayonnaise (120 ml)
- Shallot — 2 Tbsp finely chopped shallots (30 ml)
- Cornichon — 1 Tbsp finely chopped cornichons (15 ml)
- Worcester — ¾ tsp Worcestershire (3.75 ml)
- Dijon Mustard — 1 tsp Dijon (5 ml)
- Lemon Juice — 1½ tsp lemon juice (7.5 ml)
- Salt — ½ tsp kosher salt (2.5 ml)
- Tarragon — 2 tsp finely chopped tarragon (10 ml)
- Chives — 1 Tbsp chives (15 ml)
- Parsley — 1 Tbsp parsley (15 ml)
Method
- Pour to the lines in order (bottom → top): Tabasco, Mayo, Shallot, Cornichon, Worcester, Dijon Mustard, Lemon Juice, Salt, Tarragon, Chives, Parsley.
- Add finishing notes: Salt.
- Cap the jar and shake until emulsified.
