  • Chileabout 71½ chiles (500 g)
  • Ginger50 g
  • Garlicabout 10 cloves (50 g)
  • White Vinegarabout 3 Tbsp (50 ml)
  • Brown Sugar¼ cup (50 g)
  • Creamabout 1½ Tbsp (20 ml)

Method

  1. Pour liquids to the printed fill-lines, bottom to top.
  2. Cap the jar and shake until combined.
  3. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
