- Tomato — 1 kg ripe or canned (1000 g)
- Onion — 1 chopped (150 g)
- Vinegar — 100 ml white wine or cider
- Sugar — 75 g
- Salt — 10 g
- Clove — pinch ground cloves (0.5 g)
- Allspice — pinch (0.5 g)
- Cinnamon — pinch (0.5 g)
Method
- Pour to the lines in order (bottom → top): Vinegar.
- Add: Tomato, Onion, Sugar, Salt, Clove, Allspice.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
