Ingredients

  • Tomato1 kg ripe or canned (1000 g)
  • Onion1 chopped (150 g)
  • Vinegar100 ml white wine or cider
  • Sugar75 g
  • Salt10 g
  • Clovepinch ground cloves (0.5 g)
  • Allspicepinch (0.5 g)
  • Cinnamonpinch (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Vinegar.
  2. Add: Tomato, Onion, Sugar, Salt, Clove, Allspice.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
