  • Water2 cups (500 ml)
  • Sugar2½ cups (500 g)
  • Vanilla6 g
  • Star Aniseabout 2 stars (2 g)
  • Long Pepperabout 2 pods (4 g)
  • Cardamom1 g
  • Sageabout ¼ bunch (0.5 g)
  • Lemongrass2 lemongrass stalks

Method

  1. Pour to the lines in order (bottom → top): WATER.
  2. Shake-to-line (dashed marks): add SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: ¾ STALK LEMONGRASS.
  4. Season to finish: VANILLA (about ¾ tsp), STAR ANISE (¾ star), LONG PEPPER (¾ pod), CARDAMOM (a pinch), SAGE (about ¼ tsp).
  5. Cap the jar and shake until combined.
  6. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
