Ingredients

  • Tomato Juice10 Tbsp Tomato Juice (150 ml)
  • Sugar1½ Tbsp (20 g)
  • Sherry Vinegar2 tsp Sherry Vin (10 ml)
  • Worcester¼ tsp (1 ml)
  • Tabascoabout ⅛ tsp (0 ml)
  • Saltabout ⅛ tsp (1 g)

Method

  1. Pour to the lines in order (bottom → top): TOMATO JUICE, SHERRY VINEGAR.
  2. Shake-to-line (dashed marks): add SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Season to finish: SALT (to taste), WORCESTER (about ½ tsp), TABASCO (a drop).
  4. Cap the jar and shake until combined.
  5. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
