Ingredients

  • Tapioca100 g tapioca pearls
  • Water100 ml cold water (to store pearls)
  • Shallot2 French shallots, diced
  • White Wine100 ml white wine
  • White Wine Vinegar37.5 ml (2½ tbsp) white-wine vinegar
  • Veg Stock250 ml vegetable stock
  • Cream75 ml pouring cream
  • Butter125 g butter, chilled diced
  • Saltsea salt (2 g)
  • Lemon Juicejuice of 1 lemon (30 ml)
  • Finger Limepearls of 2 finger limes
  • Chives1 bunch chives, finely chopped (15 g)

Method

  1. This sauce is cooked on the stove — the jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
