- Tapioca — 100 g tapioca pearls
- Water — 100 ml cold water (to store pearls)
- Shallot — 2 French shallots, diced
- White Wine — 100 ml white wine
- White Wine Vinegar — 37.5 ml (2½ tbsp) white-wine vinegar
- Veg Stock — 250 ml vegetable stock
- Cream — 75 ml pouring cream
- Butter — 125 g butter, chilled diced
- Salt — sea salt (2 g)
- Lemon Juice — juice of 1 lemon (30 ml)
- Finger Lime — pearls of 2 finger limes
- Chives — 1 bunch chives, finely chopped (15 g)
Method
- This sauce is cooked on the stove — the jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
