Ratio by volume: Chili Flake 6 ml, Coriander 13 ml, Turmeric 3 ml, Smoked Paprika 8 ml, Saffron 1 ml, Salt 5 ml, Canola Oil 180 ml

Ingredients

  • Garlic5 garlic cloves, minced
  • Lemon Zestgrated zest of 1 large lemon (3 g)
  • Chili Flake1¼ tsp chili flake (6.25 ml)
  • Coriander2½ tsp coriander, coarsely ground (12.5 ml)
  • Turmeric½ tsp turmeric (2.5 ml)
  • Smoked Paprika1½ tsp smoked paprika (7.5 ml)
  • Parsley1 bunch Italian parsley (just under ¼ lb), chopped, stems OK (110 g)
  • Saffron⅛ tsp saffron threads dissolved in 1.5 tsp water ~60 sec (0.62 ml)
  • Cilantro¼ bunch cilantro, chopped, stems OK (25 g)
  • Salt1 tsp kosher salt (or to taste)
  • Canola Oil¾ cup neutral oil (canola/grapeseed) (180 ml)

Method

  1. Pour to the lines in order (bottom → top): Chili Flake, Coriander, Turmeric, Smoked Paprika, Saffron, Salt, Canola Oil.
  2. Add finishing notes: Garlic, Lemon Zest, Parsley, Cilantro, Salt.
  3. Cap the jar and shake until emulsified.
