  • Shallot1/4 cup finely chopped shallot (from 1 medium [1 1/2 oz.] shallot) (60 ml)
  • Lemon Zest2 Tbsp grated lemon zest (30 ml)
  • Lemon Juice1/4 cup fresh juice (from 3 lemons) (60 ml)
  • Champagne1 Tbsp Champagne vinegar or white wine vinegar (15 ml)
  • Salt1 tsp kosher salt (6 g)
  • Pepper1/2 tsp black pepper (1 g)
  • Olive Oil1/2 cup extra-virgin olive oil (120 ml)
  • Parmesan1 1/4 oz Parmesan cheese, grated on a Microplane (about 3/4 cup loosely packed) (35 g)
  • Garlic1 tsp grated garlic (from 3 medium garlic cloves) (5 ml)

Method

  1. Pour liquids to the printed fill-lines, bottom to top.
  2. Add by count: 1½ SHALLOTS.
  3. Cap the jar and shake until emulsified.
