Ingredients

  • Sherry Vinegar¼ cup sherry vinegar (60 ml)
  • Red Wine Vinegar¼ cup red wine vinegar (60 ml)
  • Olive Oil2 Tbsp extra-virgin olive oil (30 ml)
  • Sugar½ tsp sugar (2.5 ml)
  • Shallot1 small shallot, minced
  • Parsley¼ cup finely chopped parsley (60 ml)
  • Cilantro1 Tbsp finely chopped cilantro (15 ml)
  • Chives1 Tbsp finely chopped chives (15 ml)
  • Oregano1 tsp dried oregano (5 ml)
  • Saltkosher salt (2 g)
  • Pepperfreshly ground pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Sherry Vinegar, Red Wine Vinegar, Olive Oil, Sugar, Parsley, Cilantro, Chives, Oregano.
  2. Add finishing notes: Shallot, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
