  • Brown Sugar¼ cup (50 g)
  • Ginger1
  • Galangal2
  • Lemongrass1
  • Makrut Leafabout 3½ leaves (1 g)
  • Mirinabout ¾ cup (200 ml)
  • Waterabout 6 Tbsp (100 ml)
  • Cilantro1 kleiner Bund Koriander
  • Xanthan4 g

Method

  1. Pour to the lines in order (bottom → top): MIRIN, WATER.
  2. Shake-to-line (dashed marks): add BROWN SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: ¾ STALK LEMONGRASS.
  4. Season to finish: GINGER (to taste), GALANGAL (to taste), MAKRUT LEAF (1½ leaves), CILANTRO (to taste), XANTHAN (about 1½ tsp).
  5. Cap the jar and shake until emulsified.
