Ingredients

  • Sugar5 Tbsp (60 g)
  • Garlic4 Tbsp pickled minced + 2 Tbsp fresh (60 g)
  • Soy Sauce3 Tbsp dark (45 ml)
  • White Vinegar3 Tbsp (45 ml)
  • Salt2 tsp (12 g)
  • Waterabout 6 Tbsp (100 ml)
  • Bird's Eye Chileabout 6 chiles (12 g)

Method

  1. Pour to the lines in order (bottom → top): WATER, SOY SAUCE, WHITE VINEGAR.
  2. Shake-to-line (dashed marks): add GARLIC, then SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 3½ BIRD EYE CHILES.
  4. Season to finish: SALT (about 2 tsp).
  5. Cap the jar and shake until emulsified.
