Ingredients

  • Lemongrass1 Tbsp finely chopped lemongrass (15 ml)
  • Ginger1 Tbsp finely chopped ginger (15 ml)
  • Galangal1 Tbsp finely chopped galangal (or ginger) (15 ml)
  • Limezest + juice of 2 limes (60 ml)
  • Fish Sauce2 Tbsp fish sauce (30 ml)
  • Vegetable Oil1 Tbsp vegetable oil (15 ml)
  • Shrimp Paste1 Tbsp shrimp paste (15 ml)
  • Kosher Salt½ tsp Diamond Crystal kosher salt (2.5 ml)
  • Pepper½ tsp black pepper (2.5 ml)

Method

  1. Pour to the lines in order (bottom → top): FISH SAUCE, VEGETABLE OIL, SHRIMP PASTE.
  2. Shake-to-line (dashed marks): add GINGER, then GALANGAL. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 1 STALK LEMONGRASS, 2½ LIMES.
  4. Season to finish: KOSHER SALT (about 1 tsp), PEPPER (about 1½ tsp).
  5. Cap the jar and shake until emulsified.
